Genmaicha (Japanese: 玄米茶, Genmaitya, Gembaitya) is an exotic green tea, but absolutely traditional for Japan and China. This tea has several names: "rice tea", "folk tea" or "brown rice tea".
The appearance of rice tea is quite unusual, because dry tea leaves are mixed with rice, which is similar to popcorn (a part of the rice bursts during roasting). The smell of dry tea is like an inexplicable mixture of tea, fish and roasted seeds. Although Genmaich has a rather neutral taste, the unpolished rice gives it an unusual aroma, making this tea very fragrant.
Brewing Genmaicha tea is quite simple. The main thing is to warm up the cup in advance! If you want to get real fragrant Genmaicha tea, you need to brew it in water cooled to 90 °C, infuse for 2-3 minutes and no more than twice. The color of brewed Genmaicha is green, but the rice included in the mixture adds turbidity and thickness to the infusion. Therefore, the color of the finished Genmaicha infusion becomes cloudy-green-yellow.
