Kudin (Chinese: 苦丁茶, khudin) is a drink obtained by brewing dried leaves of the broad-leaved holly. Belongs to Khu Cha - the so-called "bitter tea".
Kudin is prepared from the leaves of Ilex kudingcha, a Chinese variety of broad-leaved holly, a subtropical evergreen plant that, like the Paraguayan mother, belongs to the genus Holly. Less often, kudin is made from the leaves of a privet that grows in China, such as Ligustrum robustum.
The height of the broad-leaved holly reaches several meters, its bark is brown-black or gray-black, the branches are thick, smooth, young twigs grow under old branches. The leaves of the tree are thick, leathery, the arrangement of the leaves is mosaic, the length of the sheet is 8-25 cm, the width is 4.5-8.5 cm. The sides of the leaves are jagged, the outer and inner sides of the sheet are without "eyelashes", the row is thick.
The leaves of the plant are used to prepare the drink, which are collected and processed in the southern Chinese provinces on moist, shady mountain slopes, in canyons and on the banks of streams in mixed forests. Prepared dry Kudin has several varieties - twisted, spiral, tied, sheet, pressed, etc. The highest category is Kudin Shui Xiu, made from tiny leaves collected in Sichuan province.
The drink is prepared in the same way as tea - dry brew is poured with hot water and infused. When preparing kudin, it is important to acquire a temperature regime: when brewing with 100-degree water, a bitter wormwood drink is obtained, when brewing with 40-50-degree water, a drink with a bitter, but noble taste.
Unlike ordinary herbal teas, kudin contains caffeine, but its content is not very high.
Kudin has a wide range of medicinal properties: antipyretic, anti-inflammatory, antiseptic, diuretic. Kudin's benefits do not end there, the drink also:

— promotes digestion and cleanses the body thanks to the content of enzymatic complexes, strengthens the activity of organs, which contributes to a better breakdown of fats and cholesterol and metabolism in general;
