Longjing (龙井茶) is a legendary green tea originating from Zhejiang Province, a small town in Hangzhou, located on the Xi Hu Lake. For many years, it has been included in the list of famous Chinese teas.
"Dragon's Well", which is how the name of the tea is translated, goes back to the distant year 949, to the first mention of the Lao Long Jing Monastery. Next to it was a well, which was very rich in minerals. During the rains, various visual effects were created on the smoothing of the water, as if a coiled dragon was moving. This well is highly respected and famous for its miraculous powers.
Longjin brew.
Porcelain or glassware is usually used for brewing - gaivans, teapots, glasses, flasks. In a certain sense, the glass provides some aesthetic pleasure in the process of opening the leaves and buds. It is not recommended to use earthenware, as it partially distorts the organoleptic features.
You can drink it either by pin cha (pouring) or by simple brewing in the case of a mug or cup. Let's stop at the channels, the numbers are respectively in proportions:
— Volume of water — 150 ml;
— Amount of dry brew — 5-6 g;
– Duration of brewing — 5-30 seconds;
— Number of shedding — 6-9.
The numbers are not strict. It all depends on individual taste preferences. You can start off based on them, and then find the ideal ratio for yourself using the empirical method.
Let's not forget about the first channel. It is always useful to wash away dust and dirt, as tea is not a sterile production.
