For tea of this quality class, only the first top leaf is used. For several days, the tea bushes are covered with a sun barrier, which allows the leaves to go through the process of photosynthesis more slowly. Thanks to this, the tea leaf is more saturated with nourishing moisture, becomes juicier, and is also richer in amino acids and other trace elements. After harvesting, the leaves are ground on special stone mills at a certain temperature (about 10 °C) to avoid overheating and yellowing of the tea leaf, and therefore preserving its properties as much as possible.
The Matcha Village factory specializes exclusively in growing special varieties of tea for making matcha. The assortment of this factory includes more than 10 varieties of matcha.
